Pancakes with berries

What you need:
Pancakes
1 cup low-fat cottage cheese
3/4 cup whole wheat white flour or all-purpose flour
2 scoops protein powder
1 teaspoon cinnamon
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1 1/2 cups egg replacement
1/4 cup 2% milk
1/4 cup canola oil
2 tablespoons vanilla extract
Cooking spray

Topping:
16 oz fresh, sliced strawberries
16 oz Light n Fit vanilla yogurt
8 tablespoons toasted pecan pieces (1 tablespoon per pancake)

What you do:
1. Blend all the pancake ingredients until smooth. About 2-4 minutes.
2. Heat large skillet with canola oil on medium high until a drop of water sizzles and evaporates.
3. Ladle out the batter with a 1/3 cup measurement per pancake.
4. Flip once.
5. Add topping: 2 oz of sliced berries, 2 oz of yogurt and 1 tablespoon of pecan pieces per pancake.
6. Makes 8 pancakes.
