Khichri (Indian beans and rice)

From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!

What you need

1/2 medium onion

1 inch grated fresh ginger

t dried chile peppers

3 cloves

1 bay leaf

1 cinnamon stick

1 cardamom, broken

1 tablespoon salt

1 cup dal (arhar/toor)

2 cup rice

What you do:

1)    Saute onions in vegetable oil until translucent over medium heat

2)    Add ginger and chile peppe, cloves, bay leaf, cinnamon, cardamom, salt and dal at this time. Saute fo about 12 minutes

3)    Clean your rice and set to soak

4)    Add water (about a cup) to dal mixture and cover for until half-cooked

5)    Add rice, when the rice is finished cooking the khichri is done

6)    Mix it around and make sure it doesn’t stick to the bottom – add a bit of water if needed
