South-of-the-border quiche

What you need
1 refrigerated, rolled pie crust
8 oz of egg replacement
1/2 cup of low fat milk
Freshly ground pepper
1 teaspoon of cayenne pepper
1 large onion, chopped
4 garlic cloves, minced
1 4 oz can of diced chiles
3 multi-colored bell peppers (red, orange, green)
1/3 cup low-fat pepper jack cheese, shredded
1/2 cup green onions, sliced

What you do
1. Preheat oven to 350 degrees.
2. Unroll pie crust into a deep pie pan.
3. Combine egg replacement with milk. Add ground pepper and cayenne pepper.
4. Saute onions and garlic in olive oil over low-medium heat. Add bell pepper and chiles and sauté until tender.
5. Put the vegetable mixture on top of crust.
6. Top with egg mixture.
7. Add green onions and cheese.
8. Tent the quiche in foil. Bake for 45 minutes. Remove foil for the last 10-15 minutes. Remove from oven when the egg is firm. Cool and enjoy!
