Sausage and mushroom calzones

What you need

Ultimate pizza sauce

2 sausages

1/2 onion, chopped

2 tablespoons olive oil

2 cups mushrooms

1 pkg Trader Joe’s garlic herb pizza dough

1 cup grated mozzarella cheese

1/2 cup egg wash (water + egg whites)

2 teaspoons Parmesan cheese

What you do

1. Make Ultimate pizza sauce and leave to simmer

2. In a separate pan, sauté onions in olive oil until soft. Add sausage, mushrooms and Italian seasoning.


3. Discard fat. Add a cup of pizza sauce.

4. Divide the dough into equal pieces: Six pieces make good dinner-sized calzones. Eight pieces make nice smaller calzones for lighter meals and lunches.


5. Fill with sausage and mushroom blend. Brush edges with water.


6. Lift one corner and stretch dough to opposite corner. Seal edges with your fingers or the times of a fork.


7. Arrange calzones on a greased or parchment lined cookie sheet.


8. Bake in the oven for 15 minutes or until golden brown. Allow to cool a few minutes before eating so you don’t burn your mouth. Let leftover calzones cool completely, then wrap each individual calzone tightly in plastic wrap. Transfer to a plastic freezer bag and freeze.
