What you need:
1 zucchini, sliced into 1/4 inch pieces
1 medium onion, diced

For the batter:
1/2 cup graham flour
1/4 teaspoon salt
1/4 teaspoon asafetida
1/2 teaspoon chili powder
1/2 teaspoon garam masala (a Indian spice mix)
About 1/4 cup of water

What you do:
1. Slice and dice your veggies
2. Heat enough oil to submerge your veggies over medium-high heat (about 375 degrees)
3. Combine all the batter ingredients and add enough water to achieve a a smooth, pancake batter-type consistency
4. Coat zucchini circles in batter and place in heated oil. See picture below:

5. Fry until golden brown and then drain oil on wire rack or plate lined with paper towels. See photo below:

6. Add diced onion to remaining batter. Coat and drop spoonfuls into hot oil. Fry until crispy & golden brown. See photo below:

7. Remove from oil and drain.

8. Serve hot with meethi (tamarind) chutney, hari (spicy mint) chutney or yogurt.
