Oatmeal-Applesauce Muffins

What you need:

Topping
1/4 cup raw old-fashioned oats
1/2 tablespoon firmly packed Splenda Brown Sugar Blend
1 tablespoon Smart Balance Butter, melted
1/8 teaspoon ground cinnamon

Muffins
1 1/2 cups raw old-fashioned oats
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon cinnamon
1 cup no-sugar added applesauce
1/2 cup 2% milk
1/4 cup firmly packed Splenda Brown Sugar Blend
3 tablespoons canola oil
1/4 cup egg replacement

What you do:

1. Preheat oven to 400 degrees. Lightly spray a muffin tin with Canola oil spray or baking spray.

2. In a small bowl combine all topping ingredients. Set aside.

3. For muffins, combine all the dry ingredients through cinnamon. Mix well.

4. In a medium bowl, combine wet ingredients. Mix well.

5. Add wet ingredients to dry ingredients. Mix until moistened.

6. Fill tins until 3/4 full. Add topping and pat in gently.

7. Bake 20-22 minutes or until golden brown. Cool on a wire rack and serve warm.

8. Store extras in an air-tight container.
