Mexican Breakfast Tacos

Tacos:
2 corn tortillas
1 whole egg plus 2 egg whites or 3/4 cup egg replacement
Pepper to taste
1 oz slice of pepper-jack cheese
Salsa or Tapatio sauce

Turkey-Bean Mixture:
1 pound ground turkey
1 packet of taco seasoning
1/2 can of drained, low-sodium black beans

What You Do
1. Make the Turkey-Bean Mixture. Store in container when cooled.
2. Heat small skillet to medium-high heat. Scramble the eggs. Add pepper to taste.
3. Heat another skillet to warm the tortillas. Flip once. Add 1/2 slice of cheese to each tortilla. Heat until cheese melts.
4. Split 1/3 cup Turkey-Bean Mixture between the two tortillas. Top with scrambled eggs, 1/4 avocado and Tapatio or salsa.
