Olive oil cookies with chocolate chips


What you need:

1 1/2 cup flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 cup + 2 tablespoons olive oil

1 cup Splenda brown sugar

2 eggs

1/2 cup unsweetened chocolate chips

What you do:

1. Preheat oven to 350 degrees and line baking sheets with parchment.

2.  Combine flour, baking powder and salt. Set aside.

3. Mix olive oil and sugar. Add eggs and vanilla extract.

4. Combine flour into the sugar mixture.

5. Add chocolate chips. You may also add dried fruit, nuts and coconut.

6. Drop spoonful on cookie sheet about 2 inches apart. Bake for 12-15 minutes. Cool on rack. Enjoy!
