What You Need
2 refrigerated pie shells (rolled up)
16 oz carton egg replacement
2/3 cup 2 percent milk
Olive oil cooking spray
1 16-oz packet ground turkey
3 tablespoons taco seasoning
6 oz frozen spinach leaves
3 Roma tomatoes, seeded and diced
2/3 cup sweet onion
4 chopped garlic cloves
2/3 cup Feta cheese
What You Do
1. Preheat oven to 350 degrees and remove pie shells from fridge to soften.
2. In a bowl, combine egg replacement and milk. Whisk. Set aside.
3. Saute onions and garlic. Add ground turkey in a pan and add the taco seasoning.
4. Thaw frozen spinach in the microwave and press out all the water.
5. Add spinach and tomatoes.
6. Add feta cheese until it melts and then set aside.
7. Unroll pie crusts and place in deep dish pie pans.
8. Put half the turkey mixture into each pan.
9. Split the egg mixture between both pans. Add to the pie pans.
10. Cover with foil and bake for 45-60 minutes or until firm to the touch in the middle of the quiche. Remove foil for the last 10 minutes to bake to a golden brown.
11. Cool completely before serving. You can freeze the leftovers.
