Golden Pumpkin Walnut Muffins

What you need

1 1/2 cups whole wheat white flour
2 scoops protein powder
1 tsp baking soda
3/4 tsp ground ginger
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1/8 tsp cloves
1/3 cup + 2 tablespoon Splenda Sugar Blend
1 cup canned pumpkin
1/2 cup No-Sugar Added Vanilla Soy Milk
2 tablespoon Splenda Brown Sugar Blend
3 tbsp canola oil
1/2 cup liquid egg replacement
1/2 cup golden raisins, chopped
1/2 cup chopped walnuts, chopped

What you do
1. Preheat oven 375 degrees.
2. Lightly spray muffin tin. Set aside.
3. In a medium bowl, carefully measure out flour and next 7 ingredients.
4. In a large bowl, combine sugar and next 5 ingredients (through egg). Whisk well.
5. Add flour mixture to sugar mixture. Mix well until moistened.
6. Fold in raisins and walnuts.
7. Spoon batter into muffin tins until it is 3/4 full. Bake 25 minutes or unit muffins spring back when touched in center.
8. Remove from muffin tin and cool on rack. Store in air-tight container and refrigerate.
