Mathri (Crispy Indian appetizer)

From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!

Yields: 45 mathris

What you need:
2 cups all-purpose flour
1 cup cream of wheat
1 tsp salt
1/4 teaspoon ajwain
3/4 cup water
1/2 cup of canola oil

What to do:
1) Mix all ingredients in bowl until barely hanging together (firm crumb)
2) Dump it out on a board and knead it for 5-7 minutes
3) Roll out pipe
4) Cut into small balls
5) Roll out into discs of 1-2 inch diameter
6) Pierce it thoroughly with a fork
7) Fry it in medium heat
8) Wait until they harden a touch and turn light golden brown
9) Serve hot with achar
