Smashed Potatoes With A Kick

What You Need
16 oz low-fat cottage cheese
2 pounds red potatoes, halved with skins on
Kosher salt
1/2 teaspoon black pepper
1 1/4 tablespoons wasabi powder
2 tablespoons fresh chives, finely chopped
2 tablespoons Smart Balance butter, softened
1/4 cup 2% milk
2 tablespoons grated Parmesan cheese

What You Do
1. Place potatoes in a deep pot filled with water, covering potatoes by an inch. Add a pinch of salt and bring to a boil. Reduce heat and cook until fork tender. About 15 minutes.
2. Preheat oven to 425 degrees. Prepare 8×8 baking dish with oil or cooking spray.
3. Purée cottage cheese in a blender until smooth. Set aside.
4. Transfer drained potatoes to a large bowl. Add the cottage cheese, pepper, wasabi powder, half the chives, butter an milk.
5. Season with Kosher salt as desired.
6. Smash to desired consistency.
7. Transfer to baking dish. Top with remaining chives and Parmesan cheese. Bake until golden brown about 5-7 minutes.
8. Makes 6 cups of potatoes with 3/4 cup per serving.
