Mango Chicken Quesadilla

What you need:
2 oz boneless, skinless chicken breasts, chopped or shredded
1/4 cup Mexican cheese blend, shredded
1/8 cup fresh mango, diced
1 large wheat, low carb flour tortilla
1 tablespoon fresh cilantro, chopped
Canola oil spray

What you do:
1. Heat up skillet on medium high heat.
2. Measure out the cheese and chicken.
3. Place the tortilla on griddle and sprinkle half the cheese on half the tortilla. Add the chicken, mango and cilantro.
4. Fold the tortilla over like a taco.
5. Cook the tortilla until brown on each side and the cheese is melted.
6. Slice into wedges and serve with salsa if desired.
