Tip: How to melt chocolate

You can melt chocolate in the microwave, using a double boiler or with other liquids such as melted butter, which is what I am demonstrating below:

1) Start with a bar of good quality chocolate. I am using Trader Joe’s 72% cacao dark chocolate here.

2) Chop the chocolate into smaller uniform pieces so that it melts evenly and quickly. Never melt a huge chunk of chocolate!


3) Melt your butter over low heat in a saucepan with heavy base.


4) Slowly melt the butter over low heat so the cream rises to the top without scorching it.


5) Add the chopped chocolate a quarter cup at a time and whisk into the hot butter until melts. It will start to turn a light brown at the beginning of the process.


6) At the end of the whisking process you should have a rich shiny chocolate sauce as shown above. Cool slightly and incorporate into your recipe.
