Slow cooker chicken cacciatore with rice

What you need:

2 cups brown rice

2 cups water

4 chicken breasts, cubed

1/4 cup Oregano

1/4 cup Rosemary

1/3 cup Olive oil

2 Bell peppers, sliced

8 oz mushrooms, quartered

1 onion sliced

2 cans diced tomatoes

2 tablespoons white flour

2 cups chicken stock

What you do:
1. Put two cups of brown rice and water in the bottom of the slow cooker on low.

2. Slice bell pepper, onions and quarter mushrooms. 

3. Mix the oregano and rosemary together. Dredge chicken in the mixture and sear on both sides.

4. Layer chicken on top of rice with the mushrooms on top of the chicken in the slow cooker.  

5. Sauté veggies in the same pan you cooked the chicken in. Add that to the slow cooker.  

6. Add chicken stock and tomatoes to the pan to pull in all the browned bits left from the chicken and veggies. Add flour to thicken the sauce.

7. Add this to the top of slow cooker and let cook on low for 6-8 hours or until rice softens.
