Jalebi

From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!
What you need:

Dough:
1 cup of all purpose flour
1 1/2 teaspoon active dry yeast
1/2 cup warm water
3 teaspoons corn starch

Simple syrup:
1 1/2 cups sugar
1 cup water

What you do:

How to make the syrup:
1. Put sugar and water in pan over medium heat.
2. Stir constantly until it dissolves.
3. Turn off heat.

How to fry the jalebis
1. Dissolve yeast in warm water and let it bubble.
2. Add the flour. Blend it well. When it’s smooth like pancake batter, cover and put in warm place to rise.
3. Let it double. This will take between 1 and 1.5 hours.
4. Add the corn starch. Mix until smooth.
5. Heat oil over high heat until you see small bubbles on the side of the pan.
6. Place batter in a squeeze battle.
7. Squeeze batter out of bottle into hot oil in a circular pattern.
8. Wait until its golden brown and crispy. Approximately 1 minute.
9. Flip it over with a fork until both sides are crispy and golden brown.
10. Take it out of the oil and put it in the simple syrup to soak up the sugar. Flip until both sides are coated.
11. Remove from pan and enjoy!!
