Fish Tacos with Cilantro-Lime Sauce

What You Need
Sauce:
1/4 cup thinly sliced green onions
1/2 cup finely chopped cilantro
3/4 cup low fat (2%) Greek yogurt
1 teaspoon lime zest
Juice of 1 lime
2 teaspoons garlic powder

Tacos:
1 1/2 pounds Tilapia filets or other white fish
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
1/8 teaspoon Kosher salt
1/2 teaspoon black pepper
8 corn tortillas
2 cups of shredded cabbage or 1 large cabbage, shredded

What You Do
1. Heat oven to 425 degrees.
2. Mix spices in a shallow bowl including chili powder, garlic powder, cumin, paprika, salt, pepper in a bowl. Mix well.
3. Prepare a baking dish big enough to hold all your filets in a single layer. I often use a pie dish or 8×8 baking dish. Coat with olive oil or cooking spray. Set aside.
4. Coat each side of the filets with the spice rub. Rub into the fish. Put in your prepared baking dish.
5. Bake for about 10 minutes or until fish flakes easily.
6. Remove from oven.
7. Transfer cooked fish into a bowl and break into pieces with a fork.
8. Warm tortillas.
9. Divide fish evenly among tortillas.
10. Top with 1/4 cabbage and 1 tablespoon of Cilantro-Lime Sauce per tortilla.
11. Makes 8 tacos with two per serving.
