Sugar free apple tartin

What you need: 

Caramelized apples

5 gala apples, thinly sliced

1 cup agave nectar

1 lemon, juiced

Zest of one lemon

1 tablespoon cinnamon

1 tablespoon freshly grated nutmeg

4 tablespoons butter


Leftover liquid from cooked apples

1/2 cup heavy or whipping cream

1 sheet puff pastry

What to do: 

1. Thinly slice apples and put them in a bowl of ice water with the juice of 1 lemon to keep them from browning.  

2. Melt butter over medium heat. Let it bubble and add agave nectar. Then add apples and spices. Allow to cook 10 minutes without touching the apples. When the smell of the spiced apples begins to perfume your kitchen the mix the apples. 

3. Remove the apples and make the remaining juices into a caramel by adding 1/2 cup heavy cream or whipping cream. Preheat oven to 450 degrees.

4. Cover the bottoms of the ramekins with the caramel sauce.  

5. Add a scoop of cooked apples. 

6. Top with a round of puffed pastry and bake for 18-20 minutes until the pastry is golden brown. 

Top with whip cream or caramel sauce and enjoy!
