Chicken Enchilada Quiche

What you need:
1 cup shredded, cooked chicken breasts
1 cup chopped bell peppers
1 small onion
3 garlic cloves
Taco seasoning
8 oz egg whites
1/4 lowfat milk
1 small can of diced chile peppers
1/2 small can of black olives
1/4 cup pepper jack cheese
1 refrigerated pie crust
Salt & pepper to taste

What you do:
1. Sauté garlic, onions, bell pepper over medium heat for about 5 minutes.
2. Preheat oven to 350 degrees
3. Add chicken and chiles to vegetable mixture.
4. Add taco seasoning and turn off heat. Mix occasionally.
5. Unroll pie crust and place in pan.
6. Combine egg whites and milk. Add salt & pepper to taste.
7. Add chicken mixture to pan lined with crust. Add egg mixture. Top with olives and cheese.
8. Tent the pan with foil and bake for 45 minutes. Take off foil and bake for 5 minutes.
9. Cool and enjoy!
