Mexican Meatloaf

What You Need
3 garlic cloves, minced
1 package mushrooms, sliced
3 tablespoons olive oil
16 oz lean ground turkey
1/4 cup egg replacement
1/4 cup uncooked oatmeal
4 tablespoons spicy brown mustard
1 medium onion, chopped
3 shakes Worcester sauce
Kosher salt
1/2 teaspoon black pepper
1 1/2 tablespoons ground cumin
1 1/2 tablespoons chili powder
1 1/2 tablespoons garlic powder
1 1/2 tablespoons paprika
1 1/2 tablespoons red pepper flakes
1 cup catsup
Cooking spray

What You Do
1. Preheat oven to 350 degrees
2. Spray loaf pan with cooking spray
3. Put pan on low-medium heat and saute oil and garlic. Add mushrooms and cook down. Set aside.
4. Combine turkey, egg replacement, oatmeal, mustard, onions, Worcester sauce, pepper and salt. Add 1 tablespoon each of the next 5 spices and the cooked mushrooms and mix with your hands.
5. In a small bowl, combine catsup and 1/2 tablespoon each of cumin, chili powder, garlic powder, paprika and red pepper flakes.
6. Put the meat mixture in the loaf pan. Top with spicy catsup sauce.
7. Tent with foil and bake for 30 minutes. Remove foil and bake for 10-15 more minutes.
8. Cool, slice and serve.
