Blueberry Orange Muffins


What you need:
1 cup all-purpose flour
1 cup white wheat flour
2/3 cup Splenda
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1 tablespoon of cinnamon
1 tablespoon of nutmeg
1 scoop of protein powder
1 1/4 cup lowfat buttermilk
1/4 cup Smart Balance spread, melted
2 teaspoons grated orange rind
Juice of one large orange
1 large egg, beaten
10 oz frozen blueberries
Baking spray

What you do:
1. Preheat oven to 400 degrees
2. Combine flour and next 6 ingredients into a bowl
3. Combine buttermilk and next 6 ingredients in a bowl.
4. Add to flour mixture. Stir until moist.
5. Spoon batter into 12 muffin cups/tin coated with baking spray.
6. Bake for 18 minutes or until golden brown.
7. Remove from pan and cool on wire rack. Enjoy!!
