Peach pie, sugar free


What you need:
10 fresh peaches, blanched and sliced
1/2 cup agave nectar
2 tablespoons corn starch
3 tablespoons flour
1/2 nutmeg, grated
3 tablespoons flour
Juice of 1 lemon
1 tablespoons almond extract
Use this super-rich pie crust or this standard Pie Crust (2: top & bottom)
2 tablespoons butter, cubed
2 tablespoons of egg whites

What you do:
1. Preheat oven to 450 degrees
2. Prepare crust dough and roll out bottom crust and place in the pie pan. Leave the too crust unrolled in the fridge.
3. Blanch the fruit, peel it and slice it.
4. Add agave nectar, flour, corn starch, cinnamon, nutmeg, lemon juice and almond extract to the fruit.
5. Toss lightly.
6. Place fruit mixture in pie pan and dot with your cubed butter.
7. Roll out the second crust, place on top of the fruit either as the whole crust, a lattice or star cutouts as shown above. I rolled out the dough to 1/4 to 1/2 inch thickness and using two star cookie cutters I cut out the dough. Then I placed the stars closely together to form the top crust.
8. Brush on egg whites on top.
9. Bake uncovered for 30 minutes. Cover with foil and bake for an additional 30 minutes.
10. Cool & enjoy!
