Slow cooker Mexican chicken 


What you need:

4 chicken breasts

1/2 red onion chopped

5 garlic cloves chopped

2 cans tomato sauce

1 can diced tomatoes

1/4 cup Oregano

2 tsp Cumin

3 tsp ground red pepper

Salt and pepper

What you do:

1. Toss it all in the slow cooker that is set to low. Simmer for 6 hours or overnight.

2. Shred chicken in sauce.

3. Let chicken absorb the sauce over about 2 hours.

4. Prepare enchiladas, salad, soup or quesadilla with the savory Mexican chicken. Enjoy!
