Sooka Aloo (potatoes without sauce)


From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!

Serving size: 1/2 cup; serves 20-25

What you need:
9 red potatoes, boiled

2 tablespoons olive oil
1 teaspoon Asfoetida
1 teaspoon Cumin + coriander powder
1 teaspoon Salt
1 teaspoon Garam masala
1 teaspoon Mango powder
1 teaspoon Garlic powder
1 teaspoon chili powder
Chopped cilantro for garnish

What you do:
1. Peel and chop potatoes

2. Heat oil in large griddle over medium high heat
2. Add asfoetida. Dissolve in oil.
3. Add potatoes and coat with the spiced oil.

4. Add salt, garlic powder, cumin+coriander powder and turmeric. Coat potatoes with spices

5. Add mango powder. Mix well.
6. Add garam masala, chili powder and remaining teaspoon of mango powder. Mix.
