From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!
What you need:

Dough:
4 cups of whole wheat flour
1/2 cup of vegetable oil
1/4 teaspoon salt
Up to 1 cup of water

Filling:
3 pieces of fresh ginger
1 fresh chili pepper, seeded
2 teaspoons of anise seeds
2 1/4 cups urid dal, soaked overnight
1/2 teaspoon sea salt
1/2 teaspoon asfoetida
1 teaspoon chili powder
2 teaspoons cumin & coriander mix
3 tablespoons oil
5-spice masala: fenugreek, anise seed, cumin, coriander and onion seed

What you do:
1. Rinse dal and soak in an inch of water overnight.
2. Mix dough ingredients to make a firm dough
3. For the filling, put the following ingredients into a food processor and until you have a thick paste: ginger, chili pepper, anise seeds, dal, salt, asfoetida, chili powder, cumin & coriander salt.
4. Sauté paste in oil and masala until it stops sticking to the pan and is starting to brown.
5. Heat oil in pan over medium-high heat.
6.Pull out some dough and form into flat disk:

7. Add a teaspoon to a tablespoon of filling in the center of your dough patty depending on size of disk:

8. Seal up dough on all sides to form a pouch:

9. Flatten to 1/4- to 1/2-inch thickness:

11. These are tastiest when they are fresh and hot but can be refrigerated or frozen. Enjoy!!
