Renu Mami’s Chicken Curry

Chicken curry on a bed of rice.

From Mom’s Kitchen: This is another recipe passed down from my Mom: Sunita Swaroop. She is one of the best cooks I know and I am so happy I have some of her recipes here for me!

This recipe feeds about 4-5 people

Ingredients

1 pound of chicken thighs
1 red onion, diced
3 tomatoes, blanched and peeled
2 tablespoons pureed garlic and ginger
2 tablespoons vegetable oil
4 tablespoons pureed onions
1 tablespoon garam masala (get it at an Indian store)
2 teaspoons ground coriander
1/2 teaspoon chili powder
1 teaspoons paprika
1 teaspoon salt
I cup water
2 tablespoons chopped fresh cilantro

What you do

1. Saute the chopped onion in the vegetable oil until soft and transparent in a large saucepan on medium-high heat.

2. Add the chicken and cook it for about five minutes.

3. Add three blanched & peeled tomatoes, onion puree and  garlic puree. Cook for a few minutes. Keep stirring. Then add salt, chili powder, coriander powder, paprika stirring frequently and cook the entire mixture  for 10 minutes.

4. Add a cup of water to your mixture and turn down the heat to simmer for about 15 minutes until it is fork-tender. Add garam masala and turn off the heat with the lid on the pot. It will keep cooking and distribute the flavor of the spice for the next few minutes.

5.  Sprinkle the chopped fresh cilantro on top of the curry. Serve immediately hot on a bed of rice. Enjoy!
