Pork Tenderloin with Coffee Rub

What You Need

Marinade
1/2 cup strong brewed coffee
2 tablespoons apple cider vinegar
2 tablespoons spicy brown mustard
1 tablespoon Splenda brown sugar

BBQ Pork Tenderloin
2 pound trimmed pork tenderloin
1/4 cup finely ground coffee
1 tablespoon Splenda
2 tablespoons + 1 teaspoon smoked paprika
2 tablespoons freshly ground coarse black pepper
1 1/2 teaspoons Kosher salt
1/4 cup Catsup
1 tablespoon ground mustard
Cooking spray

What You Do
1. Combine the marinade ingredients in a Zip-Loc gallon bag. Add pork. Refrigerate for 2 hours or overnight, turning bag occasionally. Remove pork & discard marinade.
2. Spray the grill with cooking spray and turn up to high.
3. Combine the ground coffee, Splenda, Paprika and salt. Rub on pork. Let stand for 15 minutes.
4. Combine the catsup, mustard and teaspoon of paprika. Set aside.
5. Place pork on grill. Make grill marks on all sides of meat. Turn down the grill, with the lid open cook until tender for about 25-30 minutes. Baste with the catsup mixture and grill until meat thermometer says 160 degrees (slightly pink).
6. Remove from grill. Allow meat to sit for about 5 minutes tented in foil on a cutting board. Slice and enjoy!
