Momma Sharon’s Jalapeño Shrimp Bites With Bacon

20130527-144325.jpgMy friend, Sharon Dubois, who I know from work shared her recipe with me and I had to get it on the site. She is clearly a wonderful cook as well as an aspiring fashion designer. I’m so lucky to have met her!


What you need:
2 bricks of cream cheese, softened
1 red bell pepper, diced
2 teaspoons each of garlic and onion powder
40 Ritz crackers
1 pound of bacon
40 med/large shrimp that are peeled, deveined and de-tailed
Olive oil 3 tablespoons
3 teaspoons minced garlic
1 tablespoon of Cajun seasoning
1 jar of sweet jalapeño pickle slices
10 slices of hot pepper jack cheese, quartered

What you do:
1. Preheat oven to 450 degrees. Then lay your crackers on a cookie sheet.
2. Combine softened cream cheese, diced red bell pepper. Blend well and add onion and garlic powders into the spread.

3. Spread it on top of the cracker. (See Sharon demonstrate above.)
4. Fry bacon until crisp, and break pieces long enough to fit across the cracker, usually a third of a slice per cracker.
(Sharon adds the bacon!)
5. Sautee the garlic in olive oil, add the shrimp and a few shakes of Cajun seasoning until the shrimp is just past pink.
6. Place one shrimp on each cracker.
7. Top each shrimp with a slice of sweet jalapeño pickle. Just the way Sharon demonstrates above.
8. Top each bite with a square of cheese.
9. Put in the oven and bake for 8 minutes or until cheese is melted.
10. Enjoy these treats straight out of the oven while the cracker is crispy and cheese melty.

  2. Hi Sharon’s Mother here. Sharon has been cooking since she was 11 years old. She could fix several well rounded meals at this. Her Dad was sick and I had to be away from home a lot. Thanks to Momma Sharon I did not have to worry about her little brothers because she fed them well. When Sharon is around you wiill be well fed. I will have to wait until she fixes this one for me.
