Sunday morning quiche

What you need:

2 refrigerated rolled pie shells 16 oz of egg replacement
2/3 cup of 2% milk
1 cup mushrooms, sliced
1 large onion, chopped
5 garlic cloves, minced
1/2 cup green onions, sliced
2/3 cup Swiss cheese, grated

What you do:
1. Preheat oven to 350 degrees.
2. In a small bowl combine the egg replacement and milk. Whisk to blend and add freshly ground pepper and cayenne pepper to taste.
3. Unroll the pie crusts into deep pie pans.
4. Heat in skillet over medium-high heat sauté the onions and garlic in olive oil. Add the mushrooms and oook down. This will take about 10 minutes.
5. Add this mixture to the pie pans.
6. Top with egg mixture.
7. Top with green onions and cheese.
8. Cover both pies with foil Put them on a baking sheets (in case of spills) and bake for 45 to 60 minutes. Uncover for the last 10 minutes. Cool and enjoy!
