Baked Italian Heaven

What you need
16 oz of whole wheat penne pasta
2 packages spicy italian chicken sausage links
1 large sweet onion, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1/2 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
2 cans diced tomatoes
8 oz of prepared Arriabiata sauce (I like the Trader Joe’s brand)
1/2 fresh basil, chopped
1 cup shredded lowfat mozzarella cheese
Olive oil cooking spray

What you do
1. Preheat oven to 350 degrees.
2. Cook 12 oz of the pasta according to package directs. Drain. Set aside.
3. Cut the uncooked sausage links into 1/4 inch rounds. Cook the sausage in a skillet sprayed with Olive oil until brown. Set aside.
4. Sauté garlic and onions in olive oil in a saucepan over medium high heat. Until translucent. Add Arriabiata sauce, tomato paste, salt, pepper, and canned tomatoes to the sausage. Bring to a boil. Then cover and simmer for 10 minutes. Remove from heat.
5. Combine cooked pasta, sausage mixture and basil. Mix on no heat.
6. Lightly spray casserole dish with olive oil. Transfer half the pasta mixture into casserole dish. Top with half the chefs. Add the rest of the pasta mixture on top and top that with the remaining cheese.
7. Bake uncovered for 25 minutes or until bubbly.
8. Serve warm with a green salad.
