Caprese Salad

What you need:
4 Roma tomatoes
2 containers fresh buffalo mozzarella
25 fresh basil leaves
1/4 cup balsamic vinegar
1/8 cup good olive oil
Freshly ground pepper and salt to taste.

What you do:
1. Slice tomatoes into 1/4 inch rounds.
2. Slice cheese into 1/4 inch rounds.
3. Wash basil. While basil is drying mix the oil, vinegar and pepper into a small bowl.
4. Place tomato slices into a shallow dish.
5. Top with cheese slices.
6. Top each round with a leaf of basil.
7. Drizzle each with the oil-vinegar mixture.
8. Sprinkle the tops with a little salt. Enjoy!!
