Finger-lickin’ roasted chicken


What you need:
1 whole roasting chicken
1/2 cup olive oil
1/2 cup fresh minced garlic
1/2 cup freshly chopped rosemary
Salt & pepper to taste

What you do:
1. Preheat oven to 350 degrees and discard giblets.
2. Clean the chicken thoroughly with cold water. Rinse until the water runs clear.
3. Pat dry with paper towel. Make sure it’s completely dry.
4. Mix oil, garlic and rosemary in a bowl.
5. Massage the entire bird with the mixture. Pry space between the skin and the meat and put marinade all over breast and leg areas of the chicken. Massage inside cavity, on bottom of chicken and top of chicken with marinade.
6. Season with salt and pepper.
7. Bake uncovered for 30 minutes or until golden brown.
8. Insert meat thermometer in breast and remove from oven when it reads 130 degrees.
9. Let the meat rest for 10-15 minutes. Carve and enjoy!
